Tequila and Lime Chicken Thighs

Juicy and tender chicken marinated in a boom of flavors- garlic, cilantro, lime and jalapeno. Alcohol can add a great depth to food as it evaporates in the cooking process. Get your taste buds ready for a hell of a ride with this recipe!


4 chicken thighs

Marinate Ingredients:

1/3 cup of quality tequila

2 limes

2 jalapenos

½ cup of cilantro

½ cup of diced onion

4 garlic cloves

1 tbsp olive oil

1 tbsp cayenne pepper or crushed red pepper

Salt and pepper to taste


1- Preheat oven to 400 degrees (or fire up the outside grill).

2- Whisk together all marinade ingredients in a bowl and submerge the chicken in the mixture. Cover chicken with plastic wrap and let marinate for a minimum of 1 hour. Obviously the longer the better. I marinated for 2 hours but could have done more like 4.

3- If you are baking the chicken, heat a skillet with olive oil and sear the chicken on high heat skin side down first for 2 or 3 minutes then flip over and sear the under-side of chicken. If you are grilling, throw these thighlets on the fiery grill and cook for about 20 minutes.

4- Transfer the skillet into the oven and bake for about 20 minutes or until cooked through (165 degrees Fahrenheit).

5- Broil the chicken for 1 or 2 minutes until the chicken skin is charred and crispy.

6- Transfer the chicken (and juices that seeped out of the chicken onto a serving plate, garnish with cilantro and freshly squeezed lime.
