Cucumber & Avocado Shrimp Bites

Cucumber & Avocado Shrimp bites
These nuggets are delicious because they hit all the spots. They have a crispy crunch from the cucumbers, soft and creamy bite from the avocado and buttery and spicy tone from the shrimpies. These look fancy shmancy, but a baby could make this. They are served cold so bringing them out to the pool under ice on a hot day would be delectable. If you don't like spicy, don't add the crushed red pepper.

Ingredients:
1 cucumber
1/2 lb peeled shrimpies
1 scallop
1 avocado
1 lime
1 garlic clove
1 tbs butter give or take a few sprinkles. Remember: I LOVE spice)
Instructions:
Heat the butter in a small sauce pan on low heat. Finely dice the garlic and throw in the saucepan with the butter, let saute for about 1-2 minutes. Add the shrimp to pan, season with salt, pepper and 1/2 the crushed red pepper. Saute for 2-3 minutes until the shrimp are pink in color. Remove from heat.
Mash up the avocado and salt, pepper and crushed red pepper, mix half of the lime juice in with avocado and let rest.
Slice cucumbers pretty thinly. Smear avocado on each slice, then place each shrimp on the avocado. Slice scallions and sprinkle on top of the shrimp. I also like to add some extra crushed red pepper and salt for some extra flavor. You can add some cilantro and/or a thin slice of jalapeno to this if you want a Mexican twist on this app. Why the hell didn't I do that in the first place? idiot.
